A GUIDE TO THE SOURCE

Salt types.

Start with where the salt comes from. Then explore the place, the process and the people behind it.

Three ways to read a salt label

Our directory groups salts by source: seawater, saline lakes and flats, rock deposits, or natural inland brine. Source is the starting point; the method is recorded separately. [1] [2] [3]

A place name adds origin. A grain or blend name adds product style. Gaucho’s Patagonian range, for example, includes fine sea salt, flakes and a seasoned chimichurri blend. These are operator descriptions, rather than separate sources of salt. [4] [5] [6]

What about Himalayan and black salt?

Himalayan pink salt belongs with rock salt. PMDC describes its Khewra pink salt as mined from Pakistan’s Punjab Salt Range. An individual product still needs its own documented origin. [7] [8]

Black salt needs a closer look. Steel City describes kala namak as a salt with a sulfurous, egg-like aroma; Saltverk lists activated charcoal in its black lava sea salt. The names describe different products, so we keep their ingredients and methods distinct. [9] [10]
