THE PLACE

Christian Clerx began making salt as a hobby in the summer of 2018, collecting Oosterschelde seawater in a jerrycan and experimenting at home. In his October 2026 account, he recalls starting at around 20 kilograms a month. Today, he reports approximately 2,000 kilograms per month, made by a permanent team of saltmakers alongside colleagues handling packing, sales and the visitor centre. The salt is produced and packaged in Bruinisse, where Zeeuwsche Zoute combines Zeeland’s saltmaking tradition with modern equipment. [4]

THE METHOD

How the salt is made.

The producer says seawater is collected near Bruinisse during the incoming tide, passed through ultrafine filters and concentrated through evaporation. The brine goes into open, gently heated pans, where pyramid-shaped crystals form. Saltmakers monitor the pans, skim off calcium and harvest the crystals by hand. Slow drying comes before smoking, blending or packaging; all these stages take place in Bruinisse. Indoor production allows the team to make salt throughout the year. [4]

Inputs from other places

The producer says its samphire and wakame come from the Oosterschelde or nearby sources; other flavouring ingredients are sourced elsewhere. These are ingredients brought to the Bruinisse saltworks for blending.
