THE PLACE

Salt with an address.

At Aigues-Mortes, Groupe Salins operates a coastal saltworks whose sea salt is chiefly intended for food uses. The working pans are also a visitor destination, with routes through the saltmaking landscape and an exhibition about the site. [1] [3]

THE METHOD

How the salt is made.

The operator identifies Aigues-Mortes as a solar-salt production site. Seawater is concentrated by evaporation in salt ponds until salt crystallises. This profile describes that broad method; the detailed harvesting and finishing sequence remains to be documented. [2]

Process described by the operator; method categories are editorial groupings. Not independently inspected.

OUR SAMPLE

Le Saunier de Camargue Fleur de Sel

Bought at retail, photographed by Salina Sol; cleaned up with AI editing tools.

Bought at retail in Illinois, United States, August 2026. Paid for by us; not supplied by the producer.

What the package says

  • Ingredient: sea salt.
  • Product of France. Harvested in Aigues-Mortes (printed on the lid, with a named master salt maker).
  • Carries the EU Protected Geographical Indication mark (Sel de Camargue / Fleur de sel de Camargue).
  • Producer address on the label: 30220 Aigues-Mortes, France.
  • 125 g cardboard drum with a cork lid.

Our notes

Fine, white, irregular crystals, neither flat flakes nor hard cubes. The lid is what ties this salt to the Aigues-Mortes saltworks; a regional press report on the harvest names the same brand. [4]

Our tasting

Slightly damp crystals, gentle saltiness, and a clean finish that's gone quickly.

One person’s taste note on this retail sample, not a claim about the producer’s salt in general.

Package wording is the producer’s own label, quoted for identification. We have not tested this salt.
