THE PLACE

Salt with an address.

Salinas do Grelha is a sea-salt production site in Olhão, in the Ria Formosa. The operator, Segredos da Ria, produces traditional sea salt and flor de sal and offers guided walks around the pans. [1] [4] [5]

THE METHOD

How the salt is made.

Sun and wind concentrate the water in shallow pans. Coarse salt crystallises on the bottom, is collected and left to dry. Flor de sal forms at the surface and is lifted with a hand-held skimming tool before the crystals sink. [2] [3]

Process described by the operator; method categories are editorial groupings. Not independently inspected.
